About the Project

As part of its corporate planning strategy, Sydney Fish Market has decided to broaden its functions and develop a series of branded, “value-added” seafood products.

To achieve these potential new products, there is a need to understand the safety and quality issues surrounding them both in terms of the raw material for use in the value-added products and in the end product themselves.

Project Objectives

1. An assessment of the food safety risks associated with the primary processing of the target species.

2. Identification and resolution of the critical quality issues associated with the primary processing of the target species.

3. An assessment of the food safety risks associated with the secondary processing of the proposed products.

4. Identification and resolution of the critical quality issues associated with the secondary processing of the proposed products.

5. Application of objectives 1-4 in the product development process leading to the production of Sydney Fish Market branded ,value-added products.

6. Capacity building within Sydney Fish Market and Southlands Fish Supplies regarding the development of value-added seafood product lines.

About the Project

The forecasted increase in marine fin fish production necessitates a strategic approach towards market development.

Currently fragmented activities are being undertaken to develop the market in the European Union. This project will evaluate the current in market activities of stakeholders, research and identify opportunities for stakeholders and make a set of recommendations that can be implemented to take advantage of the opportunities.

This plan will create a step change in business development for participants within the European Union market. Assuming a signficant business case is established, a second project will then be formed to implement the plan.This project provides a mechanism for these stakeholders to plan collectively in
order to create and maximize a demand chain for marine finfish to Europe.

Project Objectives

1. Creation of a strategic market development plan for marine finfish in the European Union market.
