2010/776 Research, develop and trial new Australian wild caught abalone products in China |

This project was proposed to address issues involving the format of Australian wild abalone being supplied to trial restaurants in China, and the low level of engagement between importers and end users resulting in a lack of knowledge about customer requirements. At the start of the project, the project team visited China and identified quality issues with frozen abalone. Discussions with end users also provided insights on potential new abalone products, including sliced abalone that could be portion controlled and the addition of sauces prior to freezing as a value added product.
Product and process evaluations with the suppliers of abalone were undertaken, including monitoring of the cool chain and core temperature of abalone, measurement of fluid loss and weight loss, and sensory evaluations. Experimental support was provided to evaluate the Nanotag applicators for various types of abalone products and a technical evaluation trial plan was developed to assess the technology with several suppliers in a proposed three month trial.
